Lately…
1. I miss Tuesday Morning. My local Tuesday Morning was blown away in the April 27, 2011 tornado. I loved that place and I definitely loved to drool over their copper pans. I hit up one in Bham last night and they told me that corporate is working on getting a new location in ttown! I cannot tell you how excited I am.
2. While in Bham, I met up with my friend from college for dinner. It was nice to catch up with her and I hope we do not let so long go between visits. In fact, we have tenative plans to meet up next month!
3. I have a quick trip to Charleston planned at the end of Feb. I miss Charleston so so so much! I also my bestie La! I cannot wait to see her and see Charleston! The hard thing is that it is a quick trip!
4. Grad School is kicking my booty! In fact, I need to get back to studying! Long Christmas breaks make it hard to get back into a routine. Hopefully I will be there by this weekend!
5. I am drooling over faux bamboo chairs. I want some so badly. If you see any that are not too expensive, please let me know! I want to paint some gold and get a cusion to put on them!
Deer Meat Tacos
A friend gave me some deer meat that was ground up into hamburger meat this weekend. I used it to make deer tacos last night that were oh so delicious!
Ingredients:
3 Tbsp Olive Oil
2 lbs. deer hamburger meat
4 – 5 Pablanos Pepper in Adobo Sauce, chopped finely
1 Tbsp Garlic Powder (I was in the mood for easy!)
1 Tbsp Sweet Paprika
1/2 Large Sweet Onion, diced
Water as needed
Heat olive oil over medium heat until it shimmers. Saute the hamburger meet over Medium heat until there is no pink left. Add Poblano peppers, spices and onions. Saute for a few minutes and add water. Reduce heat to low and cook for 10 minutes.
I served it with cheese, greek yogurt, and enchilada sauce.
